Doreen’s Anthony De Marco is heading for a slow-cooking showdown when he competes in the Meatstock BBQ Wars next month.

Mr De Marco, with the help of his wife Megan, will be competing for the title of Melbourne’s barbecuing champion during the Meatstock Festival at Melbourne Showgrounds.

Mr De Marco, who will be competing under the name Heat Check Barbecue, said he was looking forward to showcasing his skills.

He said his barbecue speciality is pit beans, while brisket is his favourite to cook, noting his barbecuing skills have come a long way from his early days.

“My favourite memory would be my first time using a smoker. I cooked pulled pork, was constantly hovering over it, mucking around trying to get the temperature right, and throwing hickory chips on the charcoal like an over-eager aunty throwing confetti at a wedding. But I somehow got there in the end and cooked a decent meal.”

The Meatstock Festival is on March 14-15.
